He added: “You'll always have people coming in and saying: 'I really like Champagne.' I say: 'We don't actually serve champagne here, we serve English sparkling wine.'
“We're really proud of it, and we love the fact that we can do it.”
The list includes six sparkling wines from the south of England – with the distance from Ulysses indicated in miles on each bottle.
The 2014 'Classic Cuvée' Chardonnay blend, from small-batch producer Tickerage in East Sussex, is the most local within just 40 miles.
“It's a lovely touch that our guests really love,” Mr Caron Brown explained.
Speaking at the Defined Wine Expo and press tasting in Bloomsbury, he said: “I've been to every one of the vineyards on the list at the moment – and I love it. I love being able to translate this story.”
“I think it's really important as sommeliers and restaurant managers — whatever you want to call us — that we go into those places and bring the story of said vineyard, whatever it is, to the consumer, within that environment where they can enjoy a glass of locally produced wine.
At the event, held at Yeomanry House, he heard that English and Welsh wine grape production is the fastest growing agricultural sector in the UK, while agriculture has increased by 75 per cent in the past five years.
